Easy Shepherd’s Pie

Ingredients
  • 1 pound ground lamb or beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 10 oz frozen peas and carrots defrosted
  • 10.5 oz can corn drained
  • 10 oz can tomato soup or mushroom soup
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon basil
  • ⅛ teaspoon black pepper
  • 3 cups prepared mashed potatoes
  • 1 cup cheddar cheese shredded
Instructions
  1. Preheat oven to 400°F.
  2. Cook lamb or beef, onion and garlic over medium heat until no pink remains. Drain any fat.
  3. Stir in soup, Worcestershire sauce, salt, basil and pepper. Spread into the bottom of a 2 qt casserole dish. Sprinkle with peas, carrots and corn.
  4. Spoon mashed potatoes overtop and top with cheese.
  5. Baked 25-30 minutes or until bubbly

Beef Barley Mushroom Soup

Ingredients
  • 2 Tbsp olive oil
  • 2 lbs beef chuck roast cubed
  • 1 medium onion chopped
  • 10 ounces sliced mushrooms
  • 2 cloves garlic minced
  • 3 carrots chopped
  • 2 celery stalks chopped
  • 1¼ cups barley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 8 cups beef broth
  • 1 bay leaf
  • salt and pepper to taste
Instructions
  1. Heat oil in a large stockpot. Add beef and brown for a few minutes. Stir in onion, mushrooms and garlic. Cook for a few minutes until tender.
  2. Stir in carrots, celery, barley, oregano, basil, beef broth and bay leaf. Bring to a boil; reduce heat and simmer about 1 hour.
  3. Discard bay leaf; season with salt and pepper. Ladle into bowls and serve.

Ingredients
  • 4 tablespoons butter unsalted
  • 4 yellow onions sliced
  • 1 teaspoon kosher salt divided
  • 2 tablespoons canola oil
  • 4 pound beef brisket
  • ½ teaspoon coarse ground black pepper
  • 2 cloves garlic minced
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 2 tablespoons beef base (or second cup of beef broth)
Instructions
  1. Preheat the oven to 325 degrees.
  2. In a large cast iron skillet melt the butter on medium heat and add in the onions and half the salt.
  3. Let cook for 15-20 minutes stirring every few minutes.
  4. Once they start caramelizing remove them from the pan.
  5. Add in the canola oil and turn the heat up to medium-high.
  6. Season the brisket with the remaining salt and pepper.
  7. Brown on both sides for 3-5 minutes on each side.
  8. Remove the beef and add the garlic, Worcestershire sauce, beef broth and beef base (if using).
  9. Stir well and add the brisket back in fat side up.
  10. Top with the onions and tent tightly with foil or a lid.
  11. Cook for 3-4 hours.
