Gourmet Mushroom Risoto

Ingredients : 
1.  6 cups Beef Stock
2.  1 Tbs Extra Virgin Olive Oil
3.  2 Tbs Butter
4.  1 med. Onion chopped
5.  2 cups Aborio Rice
6.  1/2 cup Dry Sherry or Marsala Wine
7.  1 4oz. package fresh Gourmet Mushroom mix, chopped
8.  2 Tbs chopped fresh thyme leaves
9.  1/2 cup freshly grated Parmigiano-Reggiano
10.  1/4 cup Heavy Cream
11.  Black Pepper to taste

Directions : 
1.  Bring the beef stock to a boil in a medium sauce pan and simmer over low heat.
2.  Over medium-high heat, in a large and deep saute pan, melt the butter into the oil. Add onions and saute for 3 minutes. Reduce heat to medium and add the Arborio Rice and saute another 2 minutes. Add the wine and allow to cook away for 1 or 2 minutes.
3.  Over the next 20 minutes, stir in the stock a couple laddles at a time until fully absorbed. After the first 18 minutes, add the mushroom mix. Once the 20 minutes are up, stir in the cream (optional), cheese, pepper and thyme. Remove from heat and serve.

Serving Info :  Serves 6 to 8 people.
